Description :
The vineyard at "En Champs" is located partway up the mid-slope of the hill, just under the premier cru of Champeaux. The village of Brochon, the heart of Gevrey-Chambertin, is right nearby. Limestone is predominant in the soil here, which results in a great minerality in the wines. After hand-harvesting, destemming, and fermenting with natural yeasts in tank, the wine is aged in older French barrels. Approximately 40% new wood is used in the aging process, the rest being 2 to 3 year old casks.
