The Sidekick series from Iconic Wine represents the finest wine the team could create at everyday drinking value.
Vinification: 100% fermented and aged in stainless steel. Every effort is made to preserve freshness in the wine by reducing the grapes' exposure to oxygen the moment they enter the winery. The grapes are whole-cluster pressed under nitrogen gas, and the juice is transferred immediately to tank. Fermentation is temperature controlled, keeping the ferment cool to extend fermentation time and increase aromatics. After primary fermentation, roughly 30% of the wine is allowed to go through malolactic separately. The final wine is blended back to taste before bottling.
