Vineyard Location: Cordero San Giorgio estate in Santa Giuletta
Vinification: Pinot Noir plots are harvested and vinified separately in order to enhance the various terroirs and the characteristics of the individual vintage. For this reason, multiple winemaking techniques are employed, including the use whole bunch or de-stemming, in order to seek the best expression of each plot. A cold pre-fermentation maceration is followed by fermentation in stainless steel tanks at a controlled temperature. A short pumpover is performed each day. At the end of fermentation, racking and malolactic fermentation follow in barriques.
Aging: After approximately twelve months in barriques, only the best lots are selected and blended. Bottle aging for one year before release.Grape varieties :
