Description :
Pian di Stio is an organic Fiano made from small, select parcels of the Stio vineyard at 650 meters above sea level. In a place where snow-capped mountains touch the sky and time slows, the cool climate, wide temperature ranges, and ideal calcareous-clay soils allow for excellent grapes.
Vinification: 6 hours of cryomaceration.
Soft pressing and fermentation in stainless steel tanks.
Aging: Stainless-steel tanks on the lees for 6 months before release.

The wine opens with delicate aromas of hawthorn, peach, white fig, and green apple, lifted by hints of citrus and a distinctive iodine note that speaks to its impressive minerality. On the palate, it is refreshing, lively, and energetic yet opulent, combining elegance and a strong personality with a deep, persistent, mineral-driven finish. Its structure gives it excellent aging potential, allowing the aromatic profile to develop in fascinating ways over time. Full-bodied with subtle hazelnut notes, it pairs beautifully with rich or grilled fish, seafood, fresh cheeses, pasta with fresh sauces, and creamy soups.
