The heart of Tuscany is Chianti Classico and its soul is Sangiovese. When the Tolaini team of enologists discovered that the spectacular clay and galestro soil, slope and exposition of Tolaini Montebello vineyard number 7 produced impeccable Sangiovese: pure in spirit, and transcendent in quality, their mandate became clear: to create a single vineyard 100% Sangiovese, Chianti Classico Riserva. The splendid 2008 harvest was the first vintage of the Tolaini Chianti Classico Riserva and with the 2010 vintage the Riserva was replaced with the Tolaini Chianti Classico Gran Selezione. Produced solely in the best vintages, Gran Selezione is a single vineyard wine; the 100% Sangiovese estate fruit is born in Tolaini's organically farmed Montebello Vineyard "numero sette".
Grapes are first selected during harvest in the vineyard and then by an optical sorter when they arrive at the winery; they are destemmed and the whole berries are immediately placed in French oak fermenters. Fermentation is temperature-controlled, and the must is kept in contact with the skins for 40 days. The wine rests for 24 months in 25 hl oak casks of which 6 are on the fine lees as well as an additional 6 months in stainless steel.
