Tokaj is in Edit and István Bai's blood. For as long as they can remember, their family has grown grapes and made wine in this famed Hungarian region. During the Soviet era, when they were required to make a certain amount of wine for the state, the Bai family maintained the high quality and attention to detail that they have continued to champion so many years later.
The Bai family now owns 7 hectares of land stretched over 7 vineyards in the Tokaj wine region. The name Carpinus comes from Gyertyános (latin for Hornbeam), which is the name of their largest vineyard parcel.
Edit and István are focused on working with indigenous grape varieties, especially Furmint, in addition to growing Hárslevelű, Sárga Muskotály and Sauvignon Blanc. They use environmentally friendly practices in the vineyard and are intent on expressing the terroir of their region through single vineyard wines that exemplify the soils, aspect, and microclimate of each vineyard parcel.
