Valpolicella Ripasso Classico Superiore DOC

    • Description :

      Vineyard Location: the hills of San Pietro in Cariano and Sant'Ambrogio di Valpolicella.
      Vinification: The grapes are destemmed, crushed, and cold-soaked on the skins before fermenting at 28° with selected yeasts in stainless steel. During fermentation, the wine is pumped over twice daily to build color and structure. Once alcoholic fermentation is complete, the wine is racked and goes through malolactic fermentation to soften and round out the palate.
      The fresh Valpolicella is then stored through winter before being "repassed" — refermented on the spent pomace left over from Amarone production. This traditional technique, known as Ripasso, deepens the wine's color, adds body, and gently raises the alcohol. A final racking prepares the wine for bottling.
      Aging: 100% Slavonian oak barrels followed by time in the bottle before release.

      50% Corvina, 15% Corvinone, 20% Rondinella, 5% Molinara, and 10% Oseleta

      Tasting notes :

      Deep ruby in the glass, with an intense and layered nose of black cherry, plum jam, leather, and licorice, lifted by notes of pepper and ginger. The palate is bold yet harmonious — robust structure balanced by a smooth, well-integrated finish. A natural match for porcini risotto, stuffed or baked pasta, grilled meats, roasts, and aged cheeses.
