Guido Coffa does not consider himself the owner of his estate, but
instead he views himself as its Keeper. His vineyards have been handed down to him
directly by the Monks. History has it that the archbishop of Catania, who had
made Pisano his residence, gave the Monks the land to cultivate and it was the
Monks themselves and, in particular, those of the order of the Augustinians
barefoot from Valverde who, from the 17th century, began to take care of the
land in Pisano then called Contrada Monaci in their honor: they shaped the
steep hills through the terraces that we see here today. Today Etna is recognized as one of the most renowned areas for making wine in the world. Guido Coffa's wines are certified organic.
