Stonehorse Cabernet Sauvignon by Kaesler

      The Stonehorse wines are full of character like the teams of clydesdale horses that used to work the heavy clay soil at the Kaesler vineyard, long before tractors were invented. The grapes used to make this wine are grown in estate vineyards ranging in age from 16 to 46 years in age.
      The fruit for the Stonehorse Cabernet Sauvignon is sourced from estate vineyards in the Polish Hill sub region of Clare Valley. The fruit is machine harvested in the early mornings at optimum ripeness then crushed and destemmed. The fermentation is around 7 to 9 days and once completed the wine is pressed to tank and let rest for a few days. Half of the wine is matured in 3 and 4 year old French barriques.

      Tasting notes :

      Dark crimson color. A lifted and bright bouquet of plums and mint chocolate fill the glass. A mid to full weight palate, mouth-filling with rich peppermint patty chocolate upfront, and lovely grippy tannins with a solid underline of mocca from the French barrels.
